Quiche, tarte or pie? No matter the name, it is good! Camembert, ham or leak? No matter the filling, it is good! At home or on a week-end tent trip? No matter the place, it is good! Pie is round and all-around! And easy to bake! And pie can be reheated for a fast meal when you are short of time. And this week in Trondheim, many of us are short of time. It is festival time! The Trondheim Chamber Music Festival, the coolest festival in the city, my favourite festival, is taking place. What about eating pie before running to the next concert?

I used to bake pies a lot when I moved to Norway – at a time where food was not on the agenda. It was not possible to buy food from local producers. It was not possible to buy food imported from France, Italy or Asia. Food stores were absolutely boring… A pie could transform ordinary food into a delicious dish!

This is a recipe for a kind of Quiche Lorraine à la norvégienne. You may use other ingredients for the filling. No matter as long as tastes do not crush… Eggs are mandatory. And cream too! Cream makes the pie so savoury!

Ingredients for a cake pan diameter 24 cm (use a cake pan – not a tart pan for the given quantity for filling)


  • 150 g butter (at room temperature)
  • 200 g flour
  • 2 tbs. water


  • 5 eggs
  • 2,5 dl cream (or 3 dl cream that is the package size in Norway)
  • 250 g grated clove cheese (nøkkelost)
  • 6 ham slices cut in pieces
  • 2 tbs. chopped chives
  • salt, pepper

Prepare the dough: Mix the flour and butter cut in pieces to a kind of crumble.

Add some water until the dough pulls together.

Set the dough in the fridge one hour. It will be easier to roll out. I put the dough in a plastic foil so it does not dry.

Pre-bake the pie crust: Roll the dough out. I roll out between two foils of baking paper. Fill the cake pan. Cover with beans (to avoid puffiness). Bake in the oven at 220 degrees 10 minutes.

Prepare the fill: Whip the eggs.

Add cream.

Add chopped chives, salt and pepper.

Add ham and grated cheese.

Pour on filling on the pre-baked crust. Bake the pie in the oven at 180 degrees 30-40 minutes.
